Shrimp and Bean Scampi

Ingredients
  •     1 cup(s) quick-cooking bulgur
  •     2 tablespoon(s) extra virgin olive oil
  •     1 pound(s) deveined shrimp, shelled
  •     3 tablespoon(s) fresh lemon juice
  •     2 clove(s) garlic, finely chopped
  •     1 can(s) (15 ounce) white kidney (cannellini) beans, no-salt-added, rinsed and drained
  •     10 ounce(s) spinach, washed
  •     1/4 cup(s) fresh parsley leaves, chopped
Directions
  1.     Cook bulgur as label directs.
  2.     Meanwhile, in 5-quart. saucepot, heat oil on medium-high. Add shrimp, lemon juice, garlic, and 1/4 teaspoon salt. Cook 3 to 5 minutes or until shrimp just turn opaque, stirring occasionally.
  3.     To pot, add beans, spinach, and parsley. Cook 2 minutes or until spinach wilts, stirring. Serve over bulgur.
